Rethinking Pasta…

Like many fitness junkies with a passion for cooking, I have mixed feelings about pasta. Of course I love it and could eat it every day but that would definitely be counterproductive to my fitness journey!

I have also come to appreciate pasta as a starch alternative to potatoes and rice. My personal preference is whole wheat but not everybody likes that. My dad thinks it has a faint cardboard taste to it.

Try this super easy, super quick warm pasta salad.

I mixed two cups of penne pasta and eftover farfalle to a pot of boiling water with a pinch of salt until the pasta was tender. Pour out the water and add a little Country Crocker to keep it from sticking together.

I added fresh mushrooms, heirloom tomatoes, black and green olives and a feta cheese but you can add any vegetables that suit your palate. I had a few leftover orange peppers that I cut up and threw in so feel free to improvise with whats in your fridge

Mix everything together in a big bowl and serve without dressing or with a little of your favorite light dressing. I recommend balsamic vinegar or italian dressing.
